Aisling’s Story

Aisling Kelly Hunter spent years studying and working abroad before returning to her roots and settling back in her hometown of Sligo. In 2014 Aisling opened her award-winning café, WB’S Coffee House in what used to be the family pub, The Punchbowl. It is located in the heart of Sligo Town and adjacent to the famous W.B. Yeats Statue, from where the café got its name. While running her busy Café, Aisling decided to expand the business. After meeting her husband Glenn who introduced her to Oysters, their history, harvesting and Sligo Bay. She opened the Sligo Oyster Experience and Oyster Bar at her Café to offer a unique experience to tourists and locals alike. Offering oyster town tours and oyster, mussel tasting with wine experiences at the Café as well as offering a wide range of products and fresh oysters online for sale. Aisling has been an active member of the Sligo Food Trail since 2016 and enjoys representing Sligo at trade events to attract visitors and tour operators to the county. In 2020, Aisling introduce her new Sligo Oyster Farm Tour, which is an immersive guided tour, which includes a visit to Coney Island working oyster farm on the shores of Sligo bay, overlooked by the majestic Belbulben and Knocknarea. The farm tour is based near Strandhill and begins with a Wild Atlantic Way rugged coastal walk. Along the way participants will learn ancient Sligo folklore and the history of Sligo’s native oysters, before arriving at the Oyster Farm where they will experience oyster farming and the process of cultivation first-hand. The group will be guided through the history of oyster harvesting along the Wild Atlantic Way and learn about the methods which are still in use today. Aisling will also introduce the group to coastal foraging and are treated to an oyster shucking demonstration before indulging in unlimited Sligo oysters.
