Aisling’s Story

Aisling Kelly Hunter spent years studying and working abroad before returning to her roots and settling back in her hometown of Sligo. Yeats Statue, from where the café got its name. While running her busy Café, Aisling decided to expand the business. After meeting her husband Glenn who introduced her to Oysters, their history, harvesting and Sligo Bay. She opened the Sligo Oyster Experience and Oyster Bar at her Café to offer a unique experience to tourists and locals alike. Offering oyster town tours and oyster, mussel tasting with wine experiences at the Café as well as offering a wide range of products and fresh oysters online for sale. Aisling has been an active member of the Sligo Food Trail since 2016 and enjoys representing Sligo at trade events to attract visitors and tour operators to the county.
